Healthy Recipes: Beef and Bean Chili

This hearty soup with meat and beans is loaded with protein.

The spices in this recipe fills it with flavor. For a healthier soup, use low-sodium beans and tomatoes. When shopping for ground meat, check the label for 93% lean / 7% fat.

Serves: 4-6

Ingredients 

  • 1-2 pounds lean ground beef
  • 1 15-oz can beans (pinto, kidney or black)
  • 1 15-oz can chopped tomatoes
  • 1 large onion chopped (white, yellow or sweet)
  • 1-2 bell peppers, seeded & chopped
  • 1 Tablespoon each cinnamon, cumin and paprika

Directions

  1. Heat stock pot to medium high and add ground beef, cook until the meat is no longer red and cooked through. Drain any grease and return meat to pot.
  2. Add onions, peppers and spices. Stir to combine.
  3. Add canned tomatoes and canned beans. Stir to combine.
  4. Cook over medium heat for 15 minutes.

For extra flavor, serve with fresh chopped red onion, chopped peppers, diced avocado, chopped cilantro and shredded cheese.

Modifications

This can be made using any kind of ground meat, including chicken, turkey or pork. Want to introduce more vegetables into your meals, add chopped zucchini, fresh tomatoes or canned corn.
